Job Title: Breakfast Supervisor

Department: Food & Beverage
Reports to: Food & Beverage Manager / Restaurant Manager
Location: Mount Errigal Hotel

Hours: Early morning shifts, including weekends and public holidays

Job Purpose

The Breakfast Supervisor is responsible for overseeing the smooth and efficient operation of the breakfast service, ensuring high standards of food quality, service delivery, hygiene, and guest satisfaction. The role involves leading and motivating the breakfast team while maintaining compliance with company policies and health & safety standards.

Key Responsibilities Service & Operations

  • Supervise daily breakfast service to ensure a professional, efficient, and friendly guest experience
  • Ensure breakfast service is set up, maintained, and closed down to required standards
  • Monitor food presentation, quality, and availability throughout service
  • Liaise with the kitchen team to ensure timely replenishment and smooth service flow
  • Handle guest queries and complaints promptly and professionally

Team Leadership

  • Lead, motivate, and support the breakfast service team
  • Allocate duties and manage staff rotas during breakfast service
  • Provide on-the-job training and coaching for new and existing staff
  • Ensure staff adhere to uniform, grooming, and service standards

Standards, Hygiene & Compliance

  • Ensure compliance with HACCP, food safety, and health & safety regulations
  • Maintain cleanliness and organisation of the restaurant and service areas
  • Complete daily checklists and operational records as required

Stock & Administration

  • Monitor stock levels and report shortages or wastage
  • Assist with ordering, stock rotation, and inventory control
  • Support management with reports and service feedback when required

Experience & Qualifications

Essential:

  • Previous experience in a food & beverage or hospitality role
  • Experience supervising or leading a team
  • Knowledge of food safety and hygiene standards

Desirable:

  • Previous experience in a hotel breakfast operation
  • HACCP or Food Safety certification
  • Barista or beverage service experience
