Job Summary: Responsible for managing the food and beverage outlets and teams of Gilley’s. This position will collaborate with F&B Manager to ensure the standards of service and safety guidelines are met as well as perform other job tasks as assigned, while exercising discretion and using independent judgment.

Essential Job Functions:

  • Leading F&B team by attracting, recruiting, training and appraising talented front-line personnel
  • Assist in managing food and beverage operations within budget and to the highest standards
  • Manage employees in all food and beverage outlets in a respectful manner
  • Manage all front and back of the house restaurant operations
  • Coordinate with F&B Manager and complete scheduled inventories and report re-order needs to the appropriate parties
  • Remain knowledgeable about the most updated laws and guidelines applicable to the F&B operations and team; responsible for developing trainings for and communicating about such information to staff, ensuring compliance with the same
  • Assist in interviewing, hiring, training, and managing all personnel matters for front line personnel, including, but not limited to servers, runners, snack bar attendants, bartenders, and barbacks
  • Responsible for inspecting kitchen and bar equipment to hold staff accountable for food sanitation and safety regulations
  • Develop training and train staff on cash handling procedures in accordance with accounting and company policies. This includes but is not limited to managing the proper use of POS system, pay methods, promotions and approvals. Additionally, required to assist in reconciliation of cash banks and securing bank and related reports and documentation
  • Create and collaborate within the food and beverage team to implement new ideas
  • Must be able to deal with high volume customer interactions and be consistently outgoing, upbeat and cheerful
  • Builds guest relations throughout every shift by talking with customers and making them feel welcome, comfortable, and inviting them back
  • Observes all activity within assigned area offering assistance to all guests
  • Observes activity and reports anything that is out of the ordinary
  • Capable of handling routine customer complaints and incidents and exhibits the appropriate discretion to identify situations that require the attention of management personnel; effort is given to resolve all situations in a manner that maintains positive guest relationships
  • Ensures all guests are kept in play by providing friendly and helpful service at all interactions
  • Utilizes open body language to guests on casino floor while patrolling; politely speaks with and assists guests as needed
  • Assists in maintaining a spotless casino by disposing of any cups, glasses or bottles left on the floor by guests
  • Maintains monetary and paperwork accuracy and efficiency within department/property standards
  • Adheres to regulatory, departmental, and company policies in an ethical manner and encourages others to do the same
  • Empowered to resolve guest disputes quickly and efficiently
  • Other duties as assigned

Experience and Qualifications:

  • Must be at least 18 years of age or older and have the ability to obtain and retain KRGC Gaming License.
  • One year of direct customer contact experience, preferred
  • One year of supervisory experience in a food and beverage setting
  • Proficient in MS Office and other F&B computer applications
  • Previous money handling experience preferred
  • Display professionalism; excellent verbal and written communication skills
  • Professional appearance as outlined in the Gilley’s Team Member Handbook
  • Must be able to work both independently and as a member of a team
  • Available to work required schedule which may include nights, weekends, holidays, and overtime as needed

  • Must be able to tolerate areas with secondary smoke, high noise levels, bright lights, and dust
