The role as F&B Assistant in Dotts Bar is to ensure the high standard of service in both food and drink

Main duties are as follows:

  • To ensure that Dotts Bar and Banqueting areas are set up to the agreed standard
  • To ensure that the Dotts Bar and Banqueting areas are kept clean, tidy and free from hazards at all times
  • To ensure that all Dotts Bar and Banqueting equipment is kept clean and tidy and stored appropriately
  • To ensure that adequate mis en place is completed for each shift
  • To provide full service of food and drinks to all guests in Dotts Bar and Banqueting areas
  • To ensure that guest bills are correct and to ensure that all items served are included on the guest bill
  • To ensure that the glass wash area is kept clean and tidy at all times
  • To ensure that all fridges and food storage areas are kept clean and tidy and within HACCP regulations
  • To ensure that cleaning records are completed on a daily basis
  • To ensure that the store room in the back of Dotts Bar is kept clean and tidy
  • To ensure that there is enough stock of cups/mugs/saucers/teaspoons/biscuits etc in the coffee dock
  • To ensure that the tables and chairs are cleaned prior to opening
  • To ensure that there is no build up of delph and cutlery on the coffee dock counter

. To attend training and to also come to monthly departmental meetings.

. To be able to work as a team as well as being an individually.


About The Role

The Rose Hotel is a very busy 4 star hotel located in Tralee, Co Kerry.

Dotts Bar is open from 10am daily to close, with food served from 10am - 9.30pm daily.

The menus in the bar are supplemented with specials.

The role of F&B Assistant is a face paced role and will require the successful candidate to be able to work under pressure, have an excellent level of the English language, to be part of the team and to be flexible in their role.

Required Criteria

  • To ensure all guests receive a genuine, warm, friendly, courteous welcome on arrival and during their stay from all departmental personnel.
  • To ensure that the highest possible standard of personal hygiene, appearance, body language and conduct of employees is maintained.
  • To accept flexible work schedule necessary for uninterrupted service to Hotel guests.
  • To ensure you are familiar with safe keeping, cash handling, credit policy of the Hotel.
  • To maximize revenue in all F&B departments by actively upselling to guests.
  • To ensure that guest bills are correct and to ensure that all items served are included on the guest bill.
  • Must have a fluent level of English
  • Must have at least 1-2 years experience in a similar role


Desired Criteria

  • Have all legislative training completed
