About The Shack The Shack is a beloved neighbourhood diner in Tralee, Co. Kerry, with over three decades of foodservice excellence. In 2025, we’re embarking on an exciting journey to introduce a fresh new concept, combining our heritage with a modern twist to deliver an elevated casual dining experience. We’re looking for skilled and passionate Grill Cooks to join us as we launch this dynamic new chapter.

Job Role As a Grill Cook at The Shack, you’ll play a key role in our new concept, crafting high-quality dishes that reflect our commitment to great taste and innovation. From gourmet burgers to artisan hotdogs, loaded fries, and crispy fried chicken, you’ll ensure every dish is delivered with precision and pride.

Key Responsibilities Food Preparation and Cooking: Prepare, grill, and assemble dishes, ensuring they meet our elevated standards for taste and presentation. Operate and maintain the grill, fryers, and other kitchen equipment with precision. Follow recipes and portion control guidelines to ensure consistency and excellence. Deliver beautifully plated dishes that reflect the high-quality dining experience we aim to provide.

Operational Excellence: Keep workstations clean, organised, and fully stocked throughout service. Monitor inventory for your station, ensuring adequate supplies and minimal waste. Ensure all equipment is well-maintained, reporting any issues promptly. Quality and Compliance: Adhere to all food safety, hygiene, and allergen handling standards. Uphold our brand’s reputation for delivering consistently outstanding dishes. Actively contribute to maintaining the kitchen’s high standards of cleanliness and efficiency.

Team Collaboration: Work closely with kitchen colleagues to ensure smooth and timely service. Communicate effectively with front-of-house staff to meet customer needs and maintain service quality. Support the team with feedback and ideas for menu innovation and process improvement.

Essential Skills and Experience

High level of English required, Proven experience in grill cooking, ideally within a fast-paced or high-quality casual dining environment. Knowledge of grilling, frying, and food preparation techniques. Strong understanding of food safety and hygiene (HACCP certification is a plus). Self-motivated and detail-oriented with a commitment to delivering outstanding results. Ability to work effectively under pressure and maintain consistency during peak times.

Personal Attributes Passionate about food and delivering an excellent product every time. Positive and team-oriented, with a proactive and can-do attitude. Strong organisational skills with the ability to multitask. Flexibility to work weekends, holidays, and during our business hours (12:00 PM - 9:00 PM).
