From the rich Italian influences found in the dishes at Palermo to the Spanish-leaning flair of Asado, from the bright, coastal Peruvian flavours at Pastuso to the refined elegance of Japanese charcoal grilling at Robata, each venue celebrates its cultural roots while embracing the simplicity and power of cooking over flame.

As the San Telmo Group expands, we're seeking Head Waiters across our venues to support FOH operations and leadership.

In the full-time Head Waiter role, your day-to-day will involve:

Delivering premium service on the floor while role-modelling high standards of food, wine, and guest engagement.

Conceptualising, delivering and measuring the effectiveness of pertinent training sessions to improve FOH sales & service efforts

Coaching and supporting team members in real time, from onboarding new hires to reinforcing upselling and service techniques.

Running pre-shift briefs, tastings, and training sessions to build confidence and product knowledge across the team.

Supporting Supervisors with stock control, POS accuracy, compliance, and waste reduction.

Helping to maintain venue presentation and safety standards, ensuring FOH always reflects brand expectations.

Contributing to team culture by motivating staff, giving feedback, and fostering a supportive learning environment.

Skills and Experiences:

The ideal candidate will have:
•
Unrestricted working rights in Australia

•
Full time, flexible availability incl evenings & weekends where needed

•
At least 1-2 years of experience in a premium, fast-paced restaurant; with a strong understanding of training + food & beverage service

•
Ability to confidently serve food & drinks, operate a POS system, and handle transactions accurately.

•
Strong upselling skills and a passion for creating great customer experiences.

•
Excellent communication, teamwork, and problem-solving skills, with the ability to thrive in a fast-paced environment.

•
A positive attitude, attention to detail, and a commitment to maintaining high service standards.
