About The Role

As Junior Sous Chef, you'll play a key role in supporting the Head Chef and leading the kitchen team in delivering exceptional dining experiences that reflect the quality and character of Castle Leslie Estate. This is an exciting opportunity for an ambitious chef ready to take the next step in their culinary career within a renowned hospitality destination.

What You'll Be Doing:

  • Support the day-to-day operation of Conor's Bar kitchen, ensuring smooth and efficient service.
  • Lead and inspire your section, maintaining the highest standards of food quality, consistency, and presentation.
  • Assist in training, mentoring, and developing junior team members.
  • Work closely with senior chefs on seasonal menu development, creative dish presentation, and kitchen innovation.
  • Help manage stock control, food ordering, and kitchen organisation while minimising waste.
  • Ensure all food safety, HACCP, and hygiene standards are consistently upheld.
