Job Summary
We are seeking a skilled and passionate Momo & Hakka (Indo-Chinese) Chef to join our culinary team.

- The ideal candidate has hands-on experience with Desi India–style momos (dough, fillings, pleating, steaming/frying/tandoori/chilli/jhol/butter masala) and a strong background running a fast wok line for Hakka/Indo-Chinese dishes.

- You will create bold, consistent flavours, uphold halal and food safety standards, and deliver an exceptional dining experience while supervising kitchen staff and day-to-day operations.

Duties

  • - Oversee daily kitchen operations for momo production and Hakka/Indo-Chinese line, ensuring speed, consistency, and quality.
  • - Develop and refine menus featuring Desi momos and popular Hakka mains (Hakka/Schezwan noodles, fried rice, Manchurian, Chilli, Garlic/Hot-&-Sour, Triple Schezwan/Chop Suey, appetisers).
  • - Supervise and train kitchen staff on momo folding/portioning, wok techniques, sauce prep, food handling, and safety protocols.
  • - Prepare and standardize sauces/chutneys (Schezwan, chilli/garlic, Manchurian base, momo chutneys/achar) with accurate yields and recipes.
  • - Maintain high standards of cleanliness, organization, labeling, and FIFO; complete temperature logs and allergen controls.
  • - Ensure full compliance with food safety regulations and halal handling practices.
  • - Collaborate with front-of-house for smooth ticket flow, special requests, and guest satisfaction during peak hours.
  • - Manage inventory, conduct counts, place orders, and minimize waste through batch planning and accurate prep lists.
  • - Support catering/bulk orders with efficient batch production, packing, and quality checks.
  • - Operate and maintain key equipment (steamers/combi oven, high-BTU wok burners, deep fryer) and complete daily open/close checklists.

Requirements

  • - Proven experience as a Chef or similar role with momos and Hakka/Indo-Chinese cuisine in a high-volume kitchen.
  • - Strong knowledge of dough/filling prep, momo pleating (speed & uniformity), and high-heat wok tossing techniques.
  • - Deep understanding of Indo-Chinese flavour profiles (soy, vinegar, chilli paste, Schezwan), par-boiling noodles, and rice prep for fry.
  • Supervising experience with the ability to lead, coach, and motivate a diverse team.
  • - Excellent organizational skills and attention to detail across prep, station setup, and sanitation.
  • - Ability to thrive in a fast-paced environment while maintaining consistent quality and plating.
  • Strong communication skills for effective coordination with kitchen and front-of-house teams.
  • - Valid Ontario Food Handler Certificate; HACCP mindset; knowledge of halal standards.
  • Physical ability to stand for long periods and lift up to 20 kg.
  • Bonus: Experience with RATIONAL/combi ovens, tandoori finishing, and large-scale batch production.

Job Types: Full-time, Permanent

Pay: $3,500.00-$5,000.00 per month
