Cahernane House Hotel, one of Killarney's most distinguished luxury country house hotels, is seeking an experienced and passionate Food & Beverage Manager to lead our Food & Beverage team.

The Role

As Food & Beverage Manager, you will be responsible for the day-to-day management of Herbert's Restaurant, The Cellar Bar, breakfast service, lounge dining, and room service. You will lead by example, ensuring every guest enjoys a memorable dining experience while supporting, developing, and motivating your team.

The Ideal Candidate

You will be an experienced hospitality professional with strong leadership skills and a passion for delivering outstanding guest experiences.

You will have:

  • A minimum of 2 years' experience in a similar Food & Beverage supervisory or management role.
  • Proven experience leading and developing high-performing Food & Beverage teams.
  • Strong commercial awareness with experience managing budgets, stock, and operational performance.
  • Excellent organisational, communication, and interpersonal skills.
  • Exceptional attention to detail and a hands-on approach to service.
  • Proficiency in Microsoft Word and Excel, with experience using Canva considered an advantage.
  • Fluent spoken and written English.


As a small hotel, we are looking for an F&B Manager who enjoys being part of a close-knit team and leads by example. This is a hands-on role, ideal for someone who is passionate about hospitality, enjoys working alongside their team, and is highly visible on the floor, ensuring exceptional guest service and supporting day-to-day operations.

About The Role

Key Responsibilities

  • To be responsible for the day to day running and strategic planning of the food & beverage operation in the hotel, ensuring that it is a profit driven, customer focussed, team orientated function.
  • Lead and manage all aspects of the guest dining experience across Herbert's Restaurant, The Cellar Bar, breakfast, lounge dining, and room service.
  • Lead and manage the team in all aspects of training. We are looking for a leader who is passionate about developing people and fostering a positive team culture. As we regularly welcome hospitality students, the successful candidate will play an active role in mentoring, training, and encouraging them, helping them build confidence, develop their skills, and gain valuable industry experience while setting high standards through example.
  • Inspire and develop a knowledgeable team with a genuine passion for exceptional food, wine, and customer service.
  • Maintain the highest standards of food service, presentation, cleanliness, and hygiene in line with company and statutory requirements.
  • Deliver departmental financial objectives through effective cost control, stock management, and labour planning.
  • Oversee service operations with a hands-on approach during service, providing visible leadership and support to the team.
  • Manage staff recruitment, induction, training and ongoing professional development.
  • Take responsibility for departmental stock control, stocktakes, purchasing, and the maintenance of crockery, cutlery, linen, and equipment.
  • Foster a positive, collaborative working environment focused on teamwork, accountability, and continuous improvement.
  • Ensure compliance with all health and safety, food safety, and hotel operating procedures.
