Top Cut Foods is Australia's National Specialist Butcher, supplying premium meat products to foodservice, hospitality, healthcare, education and institutional customers across the country.
With six processing and distribution facilities nationally and over 40 years of industry success, we're entering an exciting new phase of growth through our Top Cut 2.0 transformation strategy. As we continue to build a more data-driven, sales-led business, we're looking for an experienced Pricing Specialist to take ownership of our national pricing function.
This is a newly created, high-impact role reporting directly to the CFO, offering the opportunity to influence commercial decisions across the entire business.

About the Role
This is far more than maintaining price lists.
You'll own the national pricing framework—from analysing market movements and input costs through to customer pricing, governance, commercial modelling and approval processes. Working closely with Finance, Procurement, Analytics and Sales, you'll ensure our pricing remains competitive while protecting margin and supporting profitable growth.
We're looking for someone who understands protein markets, food manufacturing or foodservice pricing and enjoys making commercially sound decisions backed by robust analysis.
This is an autonomous specialist position. There are no direct reports—you'll be trusted to manage priorities, solve problems independently and deliver outcomes.
Key Responsibilities
You'll be responsible for:
- Owning and continuously improving Top Cut's national pricing framework.
- Developing and maintaining cost-plus pricing models across all product categories.
- Monitoring livestock and wholesale protein markets and translating cost movements into pricing recommendations.
- Managing pricing approvals and governance across the national business.
- Supporting Sales with tenders, customer pricing, contract renewals and commercial proposals.
- Producing pricing and margin reporting for executive leadership.
- Identifying pricing opportunities, inconsistencies and margin leakage.
- Building financial models and commercial scenarios to support strategic decision making.
- Acting as the key pricing link between Sales, Procurement, Finance and Operations.
You are commercially minded, highly analytical and comfortable making pricing decisions in a fast-moving environment.
You'll bring:
- At least 5 years' experience in a pricing, commercial, category or revenue management role within the food industry.
- Strong experience working with protein products (beef, lamb, pork or poultry) highly regarded.
- A solid understanding of food yield economics, processing costs and margin management.
- Experience building cost-up pricing models from raw material through to customer pricing.
- Advanced Microsoft Excel and financial modelling skills.
- Strong commercial judgement and the confidence to challenge assumptions.
- Excellent attention to detail and a passion for data accuracy.
- The ability to influence stakeholders across Sales, Procurement and Finance.
- A proactive, self-motivated approach with the ability to work independently.
- Foodservice, wholesale, meat processing or protein distribution experience.
- Knowledge of livestock pricing, MLA, NLRS or wholesale market reporting.
- Experience in a multi-site national business.
- Qualifications in Business, Commerce, Economics or a related discipline.
