Summary

The Production Meat Cutter Supervisor leads and supports the production team to ensure quantity and quality targets are met, while performing hands-on meat cutting and processing duties. This role combines supervisory responsibilities with active production participation.

Knowledge, Experience and Education

· High school or GED

· 1 to 3 years of experience in a fast-paced food production environment

· Previous leadership experience would be considered an asset

· Basic knowledge of various types of meat products

· Basic knowledge of the safe use and handling of meat processing equipment

· Hand dexterity and the ability to multitask

Key Accountabilities

Leadership & Team Management

· Communicate with Production Manager(s) and team to meet production targets

· Assist with workforce planning, scheduling, and daily production coordination

· Organize daily production plans, including task assignments, timing, and volumes

· Supervise employees, provide guidance, and address production-related concerns

· Monitor performance, provide feedback, and support corrective actions as needed

· Train new employees and support ongoing skill development

· Establish and maintain productivity standards

· Promote and enforce a safe, respectful, and team-oriented work environment

Production, Inventory & Quality Control

· Plan and determine production volumes to meet demand

· Oversee daily production activities to ensure efficiency and output targets

· Maintain appropriate inventory levels to fulfill orders

· Inspect product quality throughout production and take corrective action as required

· Ensure compliance with food safety, sanitation, and regulatory standards

· Coordinate product flow, including rotation, aging, and defrosting

Meat Cutting & Processing

· Cut, trim, and prepare meat products to Prairie Meats specifications

· Inspect meat for defects and remove excess fat, blemishes, or bruising

· Process primal cuts into finished or semi-finished products

· Sort and separate products by weight, grade, and composition

· Operate and maintain equipment including knives, band saws, skinner, wizard knife, slicers, tenderizers & Pounder.

Sanitation & Equipment Maintenance

· Ensure proper cleaning and sanitation of equipment and work areas

· Follow all personal and industrial sanitation procedures

· Support maintenance scheduling and equipment upkeep

OTHER DUTIES MAYBE ASSIGNED
