Restaurant Manager - Gourmet Food Parlour (Onsite Brown Thomas, Grafton Street)

Gourmet Food Parlour is delighted to offer an exciting opportunity for an experienced and motivated Restaurant Manager to lead our two concepts located within Brown Thomas on Grafton Street - Edition and Brown's Brasserie.

This is a fantastic role for a strong leader who thrives in a fast-paced hospitality environment and is passionate about delivering exceptional food and service in a premium retail setting. You'll oversee both units, leading a team of 22 staff members while working closely with the kitchen and senior management teams to drive performance, service standards, and team development.

This role also offers a unique chance to be involved in high-end in-store events and concessions hosted within Brown Thomas, making it an exciting position for someone who enjoys the energy and creativity of Dublin's hospitality scene.

Key Responsibilities

Leadership & Operations

Oversee the day-to-day running of both Edition and Brown's Brasserie, ensuring smooth, professional, and efficient service across both locations.

Team Management

Lead, support, and develop a team of 22 staff. This includes hiring, training, scheduling, and performance management, while working closely with HR and the operations team where required.

Service & Guest Experience

Create a welcoming environment for guests and ensure the highest standards of service are delivered at all times.

Financial Performance

Work with the finance team and Head Chef to manage budgets, monitor labour efficiency, control costs, and achieve financial targets.

Food Quality & Standards

Maintain excellent food quality and presentation, ensuring consistency across both units.

Collaboration with the Kitchen Team

Work closely with the Head Chef and kitchen teams to ensure strong communication and efficient service.

Sales & Performance

Track performance, analyse sales, and motivate the team to meet targets and maximise opportunities.

Compliance & Standards

Ensure full HACCP compliance and maintain the highest standards of cleanliness, safety, and organisation.

Coaching & Development

Support and mentor supervisors and team members, helping to build a strong and motivated team culture.
