Surrounded by native hawthorn trees and perched beside an 18-hole championship golf course, The Hawthorn by Galway Bay features 114 meticulously designed bedrooms, 47 of which are suites, a beautiful spa with wellness spaces, destination dining, and panoramic views of the Atlantic coast.
Opening in May 2026, this is a rare opportunity to shape the standards, service, and spirit of a landmark hotel, from its first guest to its lasting legacy.
Job Summary:
The Pastry Chef The ideal candidate has a strong understanding of baking techniques, works efficiently in a fast-paced environment, and is committed to producing high-quality products while following food safety standards, morning kitchen operations, from mise en place and menu execution to service flow, hygiene, and section organisation, ensuring a seamless and elevated breakfast offering for every guest.
Key Responsibilities
· Prepare doughs, batters, and fillings according to recipes and production schedules
· Bake breads, rolls, pastries, and other baked goods
· Measure and mix ingredients accurately
· Monitor baking times and temperatures to ensure product quality
· Shape, score, and finish products consistently
· Maintain cleanliness and organization of the bakery and equipment
· Follow food safety, hygiene, and sanitation standards (HACCP)
· Manage ingredient stock and report shortages
· Assist with product development and seasonal items when required
· Maintain accurate production levels based on occupancy forecasts
· Monitor section inventory, ensuring freshness, availability, & proper stock rotation.
· Assist in ordering & receiving deliveries, checking quality, storage & compliance.
· Maintain strict hygiene, food safety, and HACCP standards across all operations.
· Ensure cleanliness and organisation of all work areas, equipment, & storage spaces.
· Adhere to estate policies and safety procedures, reporting any maintenance or compliance issues promptly.
· Support testing and implementation of new dishes in collaboration with the Head Chef.
Required Experience & Skills
· Previous experience as a Baker or in a similar role
· Knowledge of baking techniques, fermentation, and oven operation
· Ability to work early mornings, nights, weekends, and holidays as needed
· Good time management and attention to detail
· Ability to work independently and as part of a team
· Physical ability to stand for long periods and lift heavy ingredients
· Strong technical cooking skills, particularly with eggs, hot buffet items, and à la carte preparation.
· Excellent organisational and time-management abilities, with a proactive approach to service readiness.
· Strong understanding of HACCP, food hygiene, and kitchen safety standards.
· Ability to lead a small team and work independently during early shifts.
· Passion for culinary excellence and guest satisfaction.
Candiates need to be eligible to work in Ireland.
This Job Description will be review and updated on an annual basis with the Executive Head Chef.

Job Type: Full-time
Pay: €35,000.00-€36,000.00 per year
