Job Title: Doughmaker

Location: Base Wood Fired Pizza Killester

Job Type: Full-Time

Job Summary: We are seeking a dedicated and skilled Doughmaster to join our team at Base Wood Fired Pizza. The Doughmaster will be responsible for preparing, mixing, and balling dough to ensure that our pizzas meet the highest quality standards.

This role requires a keen attention to detail, consistency in following recipes, and a passion for creating exceptional pizza dough.

The job starts at 6am till 2pm daily with production kitchen closed on Tuesdays

Key Responsibilities:

Dough Preparation:

  • Accurately measure and mix ingredients to prepare dough according to company recipes and standards.
  • Operate and maintain dough mixing equipment, ensuring all equipment is clean and in good working order.
  • Monitor dough quality throughout the mixing process to ensure consistency

Dough Balling:

  • Portion and shape dough into individual dough balls, ensuring each piece meets weight and size specifications.
  • Organize and store dough balls appropriately, using proper storage techniques to maintain freshness and prevent contamination.
  • Monitor and manage dough inventory, ensuring that sufficient dough is prepared to meet daily production needs.

Quality Control:

  • Conduct regular checks to ensure dough consistency, texture, and quality meet company standards.
  • Collaborate with kitchen staff to address any issues related to dough performance during pizza preparation.

Sanitation and Safety:

  • Follow all health and safety regulations, maintaining a clean and organized workspace.
  • Ensure proper handling and storage of all ingredients to prevent contamination.
  • Adhere to food safety guidelines and procedures, including proper use of personal protective equipment (PPE).

Team Collaboration:

  • Work closely with the kitchen and management team to coordinate dough production schedules.
  • Assist with training new staff on dough preparation and balling techniques.
  • Communicate effectively with team members to ensure smooth kitchen operations and consistent product quality.

Qualifications:

  • Preferably previous experience in a similar role, preferably in a pizza or bakery setting.
  • Strong knowledge of dough mixing and balling techniques.
  • Ability to operate and maintain dough mixing equipment.
  • Keen attention to detail and commitment to producing high-quality products.
  • Good organizational and time management skills.
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
  • Excellent communication and teamwork skills.
  • Basic understanding of food safety and sanitation practices.

Physical Requirements:

  • Ability to stand for extended periods.
  • Ability to lift and carry heavy bags of flour and other ingredients.
  • Manual dexterity for shaping and balling dough.
  • Ability to work in a warm environment near ovens and other kitchen equipment.
